Winemaking Notes
Our Laguna West Pinot Noir grapes are from vineyards west of the Laguna de Santa Rosa . The grapes are primarily Dijon Clone 777 and are hand-harvested in the cool early morning hours to maximize the quality of the fruit. The grapes are then de-stemmed into small open top fermentors. After a 4-7 day cold soak the fermentors are allowed to warm up with indigenous yeasts starting to ferment. The fermentors are punched down by hand 2 to 5 times per day. After fermentation the free run juice is racked to barrels and kept apart from the press wine juice. The final blend is created in the spring, and the wine rests for a total of 16 months in 33% new French Oak, 25% one year old oak and 42% mature oak. Our Pinot Noir is bottled unfiltered and un-fined.
Tasting Notes
Nose: Soft oak character is the background that contributes both spice and cola aromatics.
Flavors: Cherry, plum and yet more cherry lift up aromas of sassafras and nuances of anise. At first taste the wine reveals a core of mixed berry cherry flavors supported by ripe soft tannins. Quintessential to the house style the wine has great structure from natural acidity that sends flavors of dark fruit and cola to a lingering finish.
