Winemaking Notes
Our inaugural Estate Bottled Pinot Noir comes from the first block of Pinot Noir grapes planted on the Estate back in 2000. Three clones were planted; Dijon 115 (50%), Dijon 777 (35%) and Pommard (15%). Light yielding vines planted above the Laguna de Santa Rosa warm up early in the spring, setting in motion the growth of grapes of a distinct quality, that are the first to be picked on the estate. On September 3rd two days after receiving permission from Sonoma County to occupy the new winery we were busy harvesting our inaugural Pinot Noir. The grapes were de-stemmed into a small open top fermentor. After a 5 day cold soak the tank was allowed to warm up taking an additional 4 days for indigenous yeast to start fermenting. The tanks were punched down by hand 2 to 5 times per day depending on the intensity of the fermentation. After fermenting dry, the free run juice is racked to barrels and kept apart from the press wine fraction. The wine rests for a total of 16 months in 100% ne French Oak. The wine is bottled unfiltered and un-fined.
Tasting Notes
Nose: Whiffs of spice give way nuances of toast and earth combining with the fruit giving complex layers of ever changing aromatics.
Flavors: Dark Bing cherries, wild blackberries and cola meld in the glass delivering an initial burst of fruit to your senses. Firm tannins have aged gracefully yielding a plush center mouthful of fruit and savory flavors that carry through the exceptionally long finish.
