Winemaking Notes

The grapes were pressed as whole clusters at harvest to retain the most delicate fruit aromas and flavors. The wine was fermented in a mix of François Frères and Alain Fouquet French oak barrels with the natural yeasts, and 100% under went malolactic fermentation. The wine rested sur lie in barrel, with bâtonnage every two weeks. After the final racking, the wine was assembled and returned to barrel until March 2007. The finished wine was bottled unfiltered and, for this vintage, unfined as well.

Tasting Notes

Nose: powerful citrus, ripe apple, pear, apricot, lime zest, spice, and toasted vanilla impressions.

Flavors: intense, full-bodied, with a creamy texture. Nuances of ripe apple, citrus, pineapple, smoke, sweet spice, and vanilla flavors. Recommend drinking 2007 through 2012.
